These bars were created from an overabundance of Corn Flakes. We had been given several boxes and no one was eating them. This quick no-bake snack bar recipe is a keeper! These are in our weekly snack rotation for an easier, healthier homemade “snack bar” alternative.

Ingredients:
4-5 cups of Corn Flakes
2 cups chopped pecans
1 cup dried tart cherries
¼ cup ground flax seed
1 block melted vanilla candy coating
Instructions:
Step 1: Put four cups of corn flakes, pecans, cherries and flax seed in a large mixing bowl and mix. Reserve one cup of corn flakes for consistency.
Step 2: Melt the vanilla candy coating according to package directions and then pour on top of other ingredients in the bowl. Mix well.
Step 3: Add the other cup of Corn Flakes, if it needs thickness.
Step 4: Pour ingredients into a 9 by 13 pan. Spread it so that it reaches all sides of the pan. Place Parchment paper over the top and gently smash the ingredients down to create a sturdier texture.
Step 5: Let the bars “set” for approximately ten minutes.
Cut and serve. Bars should hold together but are fragile and may crumble!
Substitutions:
Use chocolate candy coating instead of white.
Any other small dried fruit would work in this recipe, but it will change the flavor some.
This recipe would also work well with Walnuts.
